Virgin Olive Oil – Olive oils obtained from the fruit of the olive tree solely by mechanical or other physical processes, under conditions which do not adversely affect olive oil and which have not undergone other treatments other than washing, decantation, centrifugation and filtration, excluding Oils obtained with solvents, adjuvants of chemical or biochemical action or by re-esterification processes and any mixture with oils of another nature.


Virgin Olive oils are classified and denominated as follows:

(.) virgin olive oil – virgin olive oil with a free acidity, expressed as oleic acid, of not more than 2 g per 100 g and other characteristics which are in line with those laid down for this category.
